  1. INGREDIENTS:
    • 3 pounds chicken bones (backs, feet, wing tips, etc.)
    • 1 yellow onion (quartered)
    • 1 bulb garlic (smashed)
    • 2 tablespoons extra virgin olive oil
    • 1 cup white wine
    • 1 cup white wine
    • 12 cups water
    • 2 bay leaves
    • 1 tablespoon black peppercorns
    • 1 bunch fresh parsley
    • Salt (or sea salt) 
  2. INSTRUCTIONS:
    • Preheat the oven to 400°F.
    • Place the chicken bones, onion, and garlic on a baking sheet. Drizzle with olive oil and toss to coat.
    • Roast the bones in the oven for 30 minutes, or until golden brown.
    • Transfer the bones to a large pot. Add the white wine and enough water to cover the bones by 2 inches.
    • Add the bay leaves, peppercorns, and parsley to the pot.
    • Bring the mixture to a boil, then reduce the heat to low and simmer for 8-12 hours.
    • Skim off any foam that rises to the surface.
    • Strain the broth through a fine-mesh sieve into a large bowl. Discard the solids.
    • Season the broth with salt to taste.
